Walnut Sauce for Ziti

 

3 oz walnut pieces

1 clove fresh garlic

2 tbsp soft butter

3 Tbsp  extra-virgin olive oil

 

3 Tbsp Grated Parmigiano Reggiano

 

1 lb Gelateria Barbara Ziti

 

Put nuts, garlic butter and oil in to food processor with steel knife and process until very fine (about 2 min.)

 

Add grated cheese and process until well mixed

 

Cook  Ziti in boiling salted water for 3 min.

Drain, lightly and put back in pot

Add walnut sauce and mix well adding a little of the pasta cooking water to the dish

 

Optionally  add a good splash of hot milk or cream

 

Taste correct seasonings with salt and black pepper as necessary
