Gnocchi di patate di Nono

 

Grandfather’s Potato Gnocchi

 

Ingredients:

 

1 lb Gelateria Barbara Gnocchi Torinese

1 lb Fresh Italian Sausage (sweet or hot as you prefer)

1 -  25 oz Jar Gelateria Barbara Vodka Sauce

4 oz sliced fresh Portobello Mushrooms

1 cup red wine

6 TBSP extra virgin olive oil

 

  1. In a large pot bring 1 gallon salted water to the boil
  2. While water is heating cut sausage into 2 inch lengths.
  3. Add ½ of the olive oil to another heavy pot and heat.
  4. Add the sausage to the pot with olive oil and start to brown.
  5. When sausage is brown add the mushrooms.  Stir and cook for 2 – 3 min.
  6. Add the red wine and allow to reduce for 6 min.
  7. Add the vodka sauce and simmer for 10 min
  8. Add the gnocchi to the now rapidly boiling water.
  9. As soon as gnocchi rise to the surface of the water they are done.
  10. Drain and toss with the sausage sauce
  11. Dress on platter or large bowl
  12. Before serving sprinkle with the remaining olive oil
  13. Serve immediately passing grated cheese separately
